Austern gehören in Europa zu den Delikatessen schlechthin und werden bereits seit 2.500 Jahren in Aquakulturen gezüchtet. Einst galten sie als Arme-Leute-Essen, heute sind sie Luxusfeinkost. Austern zu essen ist nicht nur chic, sondern auch gesund. Allerdings gibt es ein paar Regeln zu beachten…
Die Auster ist ein wahrer Delikatessen-Dauerbrenner, denn sie kam schon in der Antike auf den Tisch. Die Griechen assoziierten die Muschel mit ihrer Liebesgöttin und schrieben ihr eine aphrodisierende Wirkung zu. Auch die Römer wussten die Auster zu schätzen: Julius Cäsar war ein grosser Fan und Kaiser Vitellus soll bei einem Festmahl gar 1.000 Stück verschlungen haben.
Im Mittelalter war die Auster in Küstenregionen ein billiges Nahrungsmittel für jedermann, in aristokratischen Kreisen galt sie jedoch als kostbare Delikatesse. Ihre Beliebtheit blieb ungebrochen, bis in der Neuzeit die Industrialisierung und damit verbundene zunehmende Verschmutzung der Gewässer dem Genuss ein Ende bereiteten.
In England ging der Konsum im 20. Jahrhundert gegen null, da es immer wieder zu Vergiftungen kam. Erst 1993 wurde eine EU-Verordnung zur Hygiene bei Austern erlassen. Die Franzosen bekamen das Problem schneller in den Griff und verboten bereits 1939 die Zucht in stark belasteten Gewässern. Daher ist in Frankreich die Nachfrage bis heute sehr hoch, während in anderen europäischen Ländern die meisten Menschen noch nie eine Auster probiert haben.
Die wichtigsten Fakten und Mythen unter der Lupe
- Austern sind teuer
Da die Austernbestände in Europa in den vergangenen Jahren deutlich geschrumpft sind, ist ihr Verzehr mittlerweile ein teures Vergnügen. Spätestens seit der Austernkrankheit von 2008, die vor allem die französischen Bestände dezimierte, sind die Preise nach oben geschnellt. Der Preis der Auster hängt von ihrer Qualität und Grösse ab. Bei der Grösse gilt übrigens: Je kleiner die Zahl, desto grösser die Auster. Eine Nr. 2 ist also grösser als eine Nr. 3.
- Austern werden roh verzehrt
So sind sie in ganz Europa als Delikatesse bekannt. Dabei spielt ihre Frische die entscheidende Rolle. Austern sollten beim Kauf noch geschlossen sein beziehungsweise sich beim Klopfen gegen die Schale wieder schließen. Geschlossene Austern lassen sich in Meerwasser noch drei bis vier Tage kühl lagern, am besten werden sie jedoch am Tag des Kaufs verzehrt.
In Asien, wo die Austernbestände deutlich grösser sind und sie daher in wesentlich grösseren Mengen verzehrt werden, werden die Muscheln übrigens grundsätzlich gegart.
- Austern sind gesund
Die Auster enthält viele Vitamine und Mineralstoffe, dafür aber kaum Fett und Kohlenhydrate. Da sie über einen geringen Brennwert verfügt, sättigt sie kaum und ist daher als Vorspeise beliebt. Sogar eine aphrodisierende Wirkung wird der Auster nachgesagt und Casanova selbst empfahl den Verzehr von 50 Stück am Tag, um die Manneskraft zu stärken. Das ist allerdings wissenschaftlich nicht nachweisbar.
- Austern erscheinen in unterschiedlicher Qualität
Die Standardqualität sind Fines de claire; Spéciales de claire gelten unter Kennern aufgrund ihres reinen Geschmacks als besonders delikat; Huîtres sauvages sind grosse Austern, die eher zum Kochen geeignet sind; Marennes-Oléron von der französischen Atlantikküche gelten als überdurchschnittlich gut. Zur crème de la crème der Austern gehören die Gillardeau, Belon und Pied de cheval.
- Austern kommen nicht nur aus Frankreich
88 Prozent aller europäischen Austern kommen aus Frankreich. Mittlerweile hat sich jedoch auch Ware aus anderen Anbaugebieten einen Namen gemacht. Aufgrund des sauberen Wassers an seinen Küsten ist Irland der zweitgrößte europäische Produzent, gefolgt von Grossbritannien. Mengenmässig grosse Produzenten sind die USA und Kanada. Den Löwenanteil der jährlichen Austerproduktion von rund vier Millionen Tonnen liefert allerdings China, mit einem Weltmarktanteil von über 80 Prozent.
- Austern soll man nicht im Sommer essen
Hierbei handelt es sich um einen Mythos, der schon lange keine Beachtung mehr finden sollte. Tatsächlich ist an der Behauptung jedoch etwas dran: Austern laichen im Sommer und werden in dieser Zeit milchig. Auch die Konsistenz des Fleisches verändert sich dabei. Der sogenannte Laich wird aber schon nach wenigen Tagen ausgeschieden und die betroffenen Austern dienen wieder als Delikatesse. Einem renommierten Händler sollte der Fehler, laichende Austern anzubieten, keineswegs mehr unterlaufen. Trotzdem empfiehlt sich natürlich der Einkauf beim Fachmann.
Ebenso wird die unzureichende Kühlkette oft als Argument gegen einen Verzehr von Austern im Sommer genannt. Aber auch dieser Umstand gehört der Vergangenheit an. Heutzutage kann man gutes Gewissens davon ausgehen, dass die Austern in den hiesigen Fischtheken entsprechend gekühlt wurden – selbst über die ganze Transportdauer hinweg.
