| 800 g | Rinderfilet (küchenfertig) |
| 6 EL | Pflanzenöl |
| 2 EL | Butter |
| 1 TL | Meersalz |
| 1 TL | Pfeffer aus der Mühle |

Schritt für Schritt

Zuerst das Fleisch waschen, trocken tupfen und eventuell vorhandene Sehnen mit einem sehr scharfen Messer entfernen. Anschliessend das Rinderfilet in vier etwa gleich dicke Scheiben schneiden. Jede Scheibe sollte demnach ca. 200 g wiegen.

Danach jede Scheibe Fleisch mit etwas Küchengarn rund in Form binden. Damit gart es gleichmässiger und behält zudem seine Form.

Das Öl in einer grossen Pfanne erhitzen und die Steaks darin scharf anbraten. Mit einer Palette oder einem Pfannenwender nach kurzem anbraten drehen und von der anderen Seite ebenfalls scharf anbraten. Durch die hohe Hitze bilden sich die Röststoffe.

Die Temperatur anschliessend reduzieren und bei milder Hitze die Butter zugeben. Dafür die Pfanne eventuell kurz vom Herd nehmen.

Das Fleisch nach Belieben pro Seite 2-3 Minuten braten. Je weniger das Fleisch auf Fingerdruck nachgibt, desto besser ist es durchgebraten.

Das Fleisch salzen, pfeffern und in Alufolie wickeln. Danach im vorgeheizten Ofen bei ca. 100°C etwa 10 Minuten ruhen lassen. So kann sich das Fleisch entspannen und der Saft tritt beim Aufschneiden nicht sofort aus.
Tipps & tricks
Anstatt Rinderfilets können so auch Lammsteaks und Wildsteaks zubereitet werden. Wenn Geflügelfilet oder Schweinesteaks gebraten werden sollen, dann sollte man das Fleisch am besten nur bei schwacher bis mittlerer Hitze anbraten, da es sonst viel zu trocken wird.
Vom Bratsatz kann während der Ruhezeit des Fleischs im Ofen eine leckere Sauce gezaubert werden. Als Beilage können je nach Belieben Ofenkartoffeln, Pommes Frites, Kartoffelecken, gedünstetes Gemüse sowie ein leichter Salat und ein halbtrockener Rotwein serviert werden.

Lieber Max, nur weil dein unzubereitbares Stück Arsch mit Lidl Qualität leider leider in jedem fall geschmacklich eine Metapher deiner visage ist, heißt das nicht, dass sich normalverdiehnende auch an brückenbeherbergten wie dir orientieren müssen. Geh arbeiten. Nimm den ganzen Flüchtlingen ein bisschen Jobs weg. Und vor allem: iss erst wieder Fleisch wenn du es dir leisten kannst! Mensch, manchen Leuten muss man echt die Welt erklären !
Bis auf Fleisch 1 Stunde vor dem Braten aus dem Kühlschrank nehmen und erst salzen wenn es auf dem Teller liegt passt die Anleitung.
Lasst euch von Aussagen von Max und Pascal nicht verunsichern, das Fleisch war butterzart und richtig Geschmacksintensiv, einfach perfekt :)
Nee, so sollte man ein gutes Rinderfilet auf keinen Fall zubereiten. Bitte schaut mal bei Google, da gibt es massig gute Anleitungen.
Ich kann die kommentare nicht ganz nachvollziehen. Habe das fleisch aus dem ofen genommen. Es ist komplett ausgelaufen und war leider zu trocken.
Bitte erst salzen, nachdem das Filet aus der Alufolie herausgenommen wurde. Salz und auch gesalzene Lebensmittel lösen Aluminiumionen aus der Folie und diese reichern sich durch den Verzehr im Körper an. Das ist langfristig sehr ungesund.
Dank der Anleitung ist mir das Filet super gelungen.
Und unbedingt das Fleisch bei Zimmertemperatur anbraten!
Das ist echt Hammer, so gut ist mir schon lange kein Filet mehr geglückt. Das werd ich in Zukunft immer so machen. Das Fleisch war butterzart, lecker

kleiner Tipp....das Fleisch 1 Stunde vorher aus dem Kühlschrank nehmen und dann das Fleisch welches Zimmertemperatur hat anbraten. Es kühlt die Pfanne nicht sofort ab und ist entspannter...
