Ein kulinarischer Trip durch San Francisco führt einmal rund um die Welt. Nur wenige Städte bieten nämlich eine solche Vielfalt an Geschmäckern: Die italienische Gastronomie ist in der Pazifik-Stadt stark vertreten, die Franzosen haben Spuren hinterlassen, die Chinesen erst recht. Moderne kalifornische Küche blüht zur sternegekrönten Perfektion auf, und die besten Krabbenbrötchen der USA sind nirgendwo anders als hier zu haben.
Natürlich kann man einen Aufenthalt in San Francisco auch ganz anders starten. Aber es macht doch eine Menge Sinn, erst mal hinunter zum Hafen zu fahren. Dorthin, wo die grossen Kreuzfahrtriesen Station machen und ihre lebendige Fracht ausspucken. Schon am frühen Morgen laufen die ehemaligen Passagiere an Fisherman’s Wharf herum, man erkennt sie an den grossen Koffern, die sie hinter sich herziehen, und an den bunten Hemden.
Sauerteig und Krabbenbrötchen
Während die Ex-Schiffstouristen erst mal ihre Hotels ansteuern, starten Gourmets ihren Besuch am besten in der Bäckerei Boudin. Unten kann man ausgezeichnete Croissants kaufen, oben eine der besten Sauerteig-Pizzen der Stadt geniessen. So knusprig die auch sein mag – in der Saison gibt es garantiert nichts Besseres als ein Krabbenbrötchen, von einem der vielen Stände der Wharf. Die Dungeness Crab wird nur ein paar Monate im Jahr vor San Francisco gefangen und schon ein paar Stunden später zu Delikatem verarbeitet.
Wein zum Gourmetessen
Doch es muss nicht immer Fast Food sein, sei es noch so gut zubereitet. Eine ganze Phalanx von Ein- oder Zwei-Sterne-Restaurants findet sich innerhalb der Stadtgrenzen oder in unmittelbarer Umgebung. Im SPQR werden italienisch inspirierte Kreationen mit Weinen aus dem Piemont, der Toskana oder Siziliens kombiniert, und die Küche des Quince ist ein Beispiel für das, was man als New Californian Cuisine bezeichnen könnte.
Das Sons & Daughters wiederum zelebriert die Weinbegleitung zu den einzelnen Gängen geradezu. Sommelière Amy muss man einfach nur machen lassen – dann bringt sie so spannende Weine wie einen Savagnin von Jura-Winzer Stéphane Tissot, dann lässt sie auch Riesling aus deutschen, österreichischen oder elsässischen Weinbergen verkosten oder offeriert Zinfandel aus dem Sonoma Valley, aus Napa oder Paso Robles.
Kulturschock Kalifornien
Die von Wein und Küchenkreativität begeisterten Gäste müssen sich in San Francisco, in der Topgastronomie wie in einfacheren Lokalen, allerdings mit gewissen Gepflogenheiten befassen. Die zunächst günstig aussehenden Speisen- und Weinpreise muss man zunächst um Steuern und die – beinah obligatorischen – Trinkgelder aufstocken.
Ein Besuch zu zweit in einem Sternerestaurant summiert sich so leicht auf 300 Euro und mehr, für zwei Sterne muss man gut und gern 800 ausgeben, sofern man das grosse Menü samt Weinbegleitung erbittet. Günstiger wird es, wenn man seinen eigenen Lieblingstropfen mitbringt. 25 bis knapp über 40 Dollar berechnen die Gastronomen für diesen gar nicht ungewöhnlichen Service.
China in Chinatown
Beenden sollte man eine Visite San Franciscos aber auch bei akutem Geldmangel nicht, ohne Chinatown gesehen zu haben. In den Strassenvierteln zwischen Powell und Kearny Street wird zwar mehr Mandarin als Englisch gesprochen, aber mit Handzeichen kann man sich in der Regel auch im einfachsten Imbiss verständigen. Mit Meeresfrüchten oder Gemüse gefüllte Teigtaschen, kantonesische Fleischgerichte, originelle Süssspeisen mit reichlich Reismehl und wunderlichen Füllungen – so ganz genau weiss man selten, was man bekommt. Aber Geschmackserlebnisse zum niedrigen Preis sind gewiss, und Überraschungen gehören einfach zu einem kulinarischen Urlaub in Kaliforniens faszinierendster Metropole dazu.
