Doch was ist nun eigentlich genau ein Kobe-Rind, was hat es mit Wagyu und Tajima auf sich und wo kann man welches Fleisch bekommen?

Kobe, Tajima, Wagyu: Drei Namen, die eigentlich das gleiche bezeichnen, aber dennoch grosse Unterschiede bergen. Alle drei lösen bei Gourmets wahre Ekstase aus und beschwören Bilder von glücklichen Kühen auf grünen Weiden herauf, die mit klassischer Musik beschallt und von Geishas mit Sake massiert werden. So weit, so sagenhaft. Doch was hat es nun mit dem legendären Rindfleisch auf sich? Wo liegen die Unterschiede? Wo kann man es bekommen und wie bereitet man es zu?

- Was ist Kobe-Rind?
Beim Kobe-Rind verhält es sich ähnlich wie bei Champagner oder Cognac: Der Name unterliegt dem Gebietsschutz und nur Rinder, die in der japanischen Region Kobe geboren, gemästet und geschlachtet werden, dürfen diesen Namen tragen. Ausserdem muss ihr Fleisch besonderen Qualitätskriterien entsprechen, um als Kobe anerkannt zu werden. Diese Ehre wird jedes Jahr nur wenigen tausend Tieren der Rasse Tajima zuteil.
- Wo bekommt man Kobe-Fleisch?
Original Kobe-Fleisch ausserhalb Japans zu bekommen ist so gut wie unmöglich. Lebende Tiere dürfen nicht ausgeführt werden und das Fleisch bleibt ebenfalls im Land. Wer in den echten Genuss kommen will, reist also entweder nach Japan oder „begnügt“ sich mit Wagyu-Beef.
- Was ist Wagyu?
Wagyu heissen die Rinder dann, wenn sie ausserhalb Japans gezüchtet und geschlachtet werden, wobei die Fleischqualität der des Originals in nichts nachsteht. Die Wagyu-Rinder werden häufig in Australien, den USA und Kanada, gezüchtet. Hier steht viel Platz zur Verfügung, so dass die Tiere oft im Freien sind. Kobe- und Tajima-Rinder verbringen aufgrund der stark begrenzten Freiflächen in Japan ihr Leben überwiegend im Stall.
- Was macht das Fleisch so besonders?
Gefüttert werden die Tiere mit einem besonderen Mix aus Getreide, Rüben, Kartoffeln und Bier! Dadurch wird das Fleisch besonders zart und saftig und erhält seinen charakteristisch-würzigen Geschmack. Dank seiner dünnen Fettauflage und gleichmässigen, enorm feinen Marmorierung ist es in der Spitzengastronomie weltweit äußerst beliebt. Ein angenehmer Nebeneffekt ist der bis zu 50 Prozent höhere Anteil an ungesättigten Fettsäuren im Vergleich zu anderen Rinderrassen.
- Was kostet Wagyu-Beef?
Der unvergessliche Geschmack und die vermuteten gesundheitlichen Vorteile haben ihren Preis: Je nach Teilstück und Cut rangiert der Kilopreis für Wagyu-Rind zwischen 60 und 600 Euro!
Die richtige Zubereitung
Bei einem derart wertvollen Fleisch ist es entscheidend, dass die Zubereitung zu 100 Prozent gelingt. Hier ein paar Tipps, damit dem unverfälschten Luxus-Genuss nichts im Wege steht:
- Das Fleisch sollte vor dem Braten Zimmertemperatur haben
- Vor dem Braten nicht salzen oder anderweitig würzen. Das Fleisch in einer beschichteten Pfanne oder auf dem Holzkohlegrill von beiden Seiten rund 2 Minuten scharf anbraten
- Anschliessend für zirka 15 Minuten im auf 80°C vorgeheizten Backofen nachziehen lassen
- Die ideale Kerntemperatur des Fleischs liegt bei 65°C
- Wagyu-Fleisch nicht Englisch oder Medium verzehren. Experten empfehlen es durchgebraten, dann soll es am besten schmecken.
- Das Fleisch soll im Mittelpunkt stehen, also am besten mit gar keiner oder wenig Sauce servieren; dazu passen frisches Weissbrot und ein einfacher Salat.

Hallo, Kobe darf seit 2014 exportiert werden und ist auch in Deutschland erhältlich - z. B. bei OTTO GOURMET. Ausserdem hat das Fett einen sehr niedrigen Schmelzpunkt, sodass das Fleisch bereits bei Zimmertemperatur regelrecht zerfließt. Dadurch ist es ratsam, das Fleisch direkt aus dem Kühlschrank in die Pfanne etc. zu geben, auf Zimmertemperatur zu temperieren ist überflüssig. Auch die Kerntemperatur kann ruhig 5-10 Grad tiefer sein, als die empfohlenen 65 Grad - aber da hat jeder seine eigenen Vorlieben. LG Philipp
Vielen Dank für den guten Beitrag. Mich interessiert noch, welcher Rotwein (keine "Neue Welt"-> NZ, AUS, Südafrika oder US...) am besten zu einem Grass Fed Wagyu Rumpsteak aus Neuseeland passt. Ich habe mir und meinen Freunden einfach mal ein guten "Block" (ca. 2kg) gegönnt und einen Spanier "ALION" 2011 dazu aufgemacht, der denke ich ganz gut gepasst hat. Aber zum besten Fleisch möchte ich auch den perfekten Rotwein öffnen!
